- 11.30 Hot chocolate and sit down
- 11.35 Introductions form Gerry Wilton
- 11.40 Brief history of chocolate from Aztecs to present day

Main Event
- 11.55 Introduction form William Curley - Chocolatier of the Year 2007 -2008
- 12.15 A look at the raw material - cocoa beans. A tasting of different Chocolates
form
around the world including a William Curley chocolate.
- 12.30 Demonstration starts
Ganache and Infusions, Sea salt caramel, hot chocolate, hand tempering of chocolate.
- 13.00 Group splits to workstations and is led through the art of rolling of truffles, dipping and dusting
in cocoa powder.
Everyone will get a chance to roll their own truffles and bag them to take
home or eat
during the event under
the expert supervision of
William and his pastry chefs.
- 13.30 short 10 min comfort break.
- 13.40 Demonstration - Chocolate Sable biscuits and trade secrets
for pastry,
decoration and a
special Christmas recipe.
- 14.10 A Question and Answer session
- 14.30 Closing remarks, thanks and goodbyes. Goody bag for all,
including
chocolates, hot
